Packed with energy promoting manganese and fiber, brown rice contains properties that can encourage healthy bowels, lowered cholesterol and can even reduce the risk of cancer. Together with high fiber and vitamin packed cranberries, almonds and walnuts. This yummy  and nutrition enriched rice salad is great all by itself but even better as a room temperature side to grilled chicken, vegetables or fish.

Pear and Cranberry Infused Nutty Brown Rice Salad

Ingredients:

  • 3 cups of cooked long grain brown rice
  • 1 large cored and diced pear
  • 3 chopped medium sized green onions
  • ½ chopped toasted walnuts and almonds
  • 1/3 cup crumbled blue cheese
  • 1/3 cup herb vinaigrette
  • ½ tsp. salt
  • ¼ tsp. pepper
  • Handful of Dried cranberries 
Combine in a large bowl, tossing to coat. Eat solo for a quick lunch or serve on the side of your favorite grilled protein for a healthy dinner. Makes 6 servings
